It's A Brand New Year!

Keeping with holiday traditions I have made several new years resolutions. One of the big and not so personal ones is to get healthy! Lots of fruits and veg seem to be the way to go so in with the healthy foods and out with basicly everything in my house.

I've picked my poison and it's Paleo. I know, to the naked eye it sounds like your average fad diet. I don't think of it that way. It just seems healthy.

The first thing I noticed was there are no packaged foods involved. This means I won't be having my morning pop tart. I think I can live with that.
Packaged foods are mostly just a convenience. Cheap and easy. Thats why I love them!  It's not going to be easy to make a change and put some effort into it.

The second thing I noticed is there is no dairy.  This probably won't be as hard to do since I dont eat a ton of dairy anyway. I do love cheese and I see myself having it on salads and such but I'm not going to go out of my way to eat it. 

The next items to be excluded are grains. This will be super hard. I like bread and rice and all that goodness but those of you on low carb/no carb know it's not that good for you.

So basicly all you can eat is meat, veggies, fruits, nuts, and good fats like olive oil.

I'm probably leaving something out and if you're interested you can find stuff on the internet about it.

I'm hitting it hard starting with lunch today.

Cobb salad: no blue cheese crumbles, yes to spinach, eggs, bacon, turkey, avocado, and just a pinch of ranch dressing. I really mean a pinch too.  I like to dip my fork in the dressing instead of slathering my salad in it.

PS My salad tasted awesome!

No this is My CANDY!

I'm so frustrated with my Mom's nursing home.  First of all I had to hunt and search for my Mom's social security check in October.  It went to the nursing home.  Why would it go there when its been coming to her checking account every month for years now?  Well.  The nursing home asked my Mom if she would like her check to come there.  Never mind the fact that she has dementia and has no idea what we pay out of the SS check every month.  Of course she wants it to come there.  

After determining all this and verifying that the check in fact went to the nursing home, I spoke with someone (in person) in an effort to get the ball rolling on getting the difference mailed back to me.  I thought we were all square.  I left a message in the middle of October when I still hadn't received anything.  I called again on the 23rd and the person I needed to speak with was on vacation.  I called back on the 31st and again I thought we were all square.  

I just felt like something was wrong.  I called today to see if my check had been mailed and it turns out they need an invoice from the insurance company to verify how much I should get back.  Now it seams to me that this process would have gone much smoother if that fact had been mentioned, oh I don't know, at the beginning of the month when I was there.  OK fine.  I can send you and invoice but keep in mind I have already paid this and desperately need the money back since it is now November and I will have to pay it again in a few short days

I have applied to be my Mom's Representative Payee which means that when that gets finalized, I will get her checks again.  

For now-

I'm so frustrated that I want to eat an entire bowl of candy with reckless abandon.

Chickens

Tonight I'm making chicken. Pretty simple recipe. Put chicken in pan spread some garlic on it. Sprinkle with goodness like thyme, basil, rosemary and marjoram. Cook for around 25 min. Yum

Spaghetti Squash

So I decided to make a paleo friendly spaghetti dish the other night. I've eaten spaghetti squash before but never made it myself. Thought it would be fun.
I cut the squash in two and placed it in baking dish with a little bit of water and baked it for 30 min. I would bake it longer if you like it softer.
When its done you scrape the insides out and it gets stringy and looks like spaghetti! I paired it with some ground beef and 2 cups marinara sauce.
Very tasty!

I just started...

I just started this blog.  I'm almost at a loss for words, and for those of you who know me, I'm sure you are surprised.   I have a bunch of things going on in my head at all times and with most people I usually just say what ever is in there.  There are times that I keep things to myself.  I'm not sure how many of those things will make it to this blog but I guess we are about to find out.
